1 Minute Mug Brownie!
VEGETARIAN. VEGAN. EGG FREE. DAIRY FREE. NUT FREE*.
This recipe doing the rounds is one of the coolest things I've found on the net lately... a yummy chocolaty brownie in one minute, in just a one person portion. And it's naturally egg and dairy free :)
4 tablespoons flour
4 tablespoon sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons vegetable oil
3 tablespoons water
1/8 teaspoon salt
1. Mix dry ingredients together in mug, breaking up any lumps. Add oil and water then mix well.
2. Microwave on high for roughly a minute.
3. Let it cool for a minute and it's done! Serve with some soy ice cream, or a non-vegan version, regular ice cream and a little nutella or chocolate topping!

Cookie Dough Bites
VEGETARIAN, FISH FREE, EGG FREE, DAIRY FREE*

This cookie dough recipe, inspired by Oh She Glows, is a healthier version meant to be eaten raw that won’t leave you feeling sick!
½ cup raw nuts
¼ cup rolled oats
¼ cup flour (I used plain but wholemeal would be even better)
½ teaspoon salt
1.5 tablespoons brown sugar
1.5 tablespoon of honey
½ teaspoon vanilla extract
¼ cup dairy free chocolate chips
1. Process nuts and oats in a food processor into a fine crumble.
2. Add salt, sugar and flour, process for another minute.
3. Add honey and vanilla, process until sticky.
4. Stir in chocolate chips and using clean hands, roll mixture into balls.
*As always, if you have allergies double check the individual ingredients J I use regular dark chocolate chips in my cookie as I’m not concerned about trace amounts of dairy, but if you are looking for chocolate that is completely dairy-free, Sweet William make dairy free chocolate chips.
** This recipe can be made vegan by replacing the honey with pure maple syrup.
Healthy Choc Mint Smoothie

Modified from a recipe by Angela Liddon from Oh She Glows ... this is a healthy smoothie that tastes like it shouldn't be!
* Handful of spinach leaves
* 2 tablespoons of fresh mint leaves
* 1.5 frozen bananas, chopped
* 1 cup of soy milk
* 1 tablespoon dark dairy free chocolate chips
* Remember to check individual ingredients :)
